Ingredients
Grilled asparagus:
- 1 1/2 pounds asparagus trimmed
- 1 Tbsp. olive oil
- 2 Tbsp. Parmigiano-Reggiano, grated
- Salt and pepper to taste
- Fresh cracked black pepper to taste
Light Caesar dressing:
- 2 Tbsp. plain, non-fat Greek yogurt
- 2 tsp milk
- 2 tsp lemon juice
- 1 clove garlic, grated
- 1 anchovy fillet, chopped
- 1/4 tsp Worcestershire sauce
- 1/4 tsp Dijon mustard
- 1 Tbsp. Parmigiano-Reggiano, grated
- Salt and pepper to taste
Instructions
Light Caesar dressing
- Combine all ingredients in small bowl until well blended.
Asparagus
- Toss asparagus spears in olive oil with salt and pepper.
- Grill over medium-high heat until crisp-tender and slightly charred, about 3-5 minutes.
- Top asparagus with the Caesar dressing, freshly grated parmesan and cracked black pepper. Top with croutons if desired.
- Serve and Enjoy!
