If you can bake a cake, you can make this yummy Raspberry Zinger Poke Cake for dessert.


  • 1 white or yellow cake mix (also water, vegetable oil and eggs/eggs whites as instructed on box)
  • 1 box (3 oz.) raspberry-flavored gelatin
  • 1 c. boiling water
  • 1/2 c. cold water
  • 1 container (8 oz.) Cool Whip, thawed
  • ¾ cup shredded sweetened coconut



  1. Bake cake according to package directions and cool completely.
  2. Pierce cooled cake all over with a fork. In a small bowl, stir gelatin and boiling water until sugar is dissolved.
  3. Stir in cold water. Pour over cake, cover, and refrigerate 2 or more hours (overnight is fine).
  4. Frost with whipped cream and sprinkle coconut over the top.
  5. Keep refrigerated until ready to serve. Serve cold and refrigerate any leftovers.

This was absolutely the best Poke Cake I’ve ever made, and I’ve been making them since the “70’s”. So moist and flavorful. The water quantities in Poke cake recipes all range from 1 cup to 2 cups. This 1 1/2 cups is perfect.
TIP: Get a ladle and ladle the jello on a little at a time and.. slowly. The slower you go at it the more you’ll succeed at filling up all those holes 👍
