If you can bake a cake, you can make this yummy Raspberry Zinger Poke Cake for dessert.


  • 1 white or yellow cake mix (also water, vegetable oil and eggs/eggs whites as instructed on box)
  • 1 box (3 oz.) raspberry-flavored gelatin
  • 1 c. boiling water
  • 1/2 c. cold water
  • 1 container (8 oz.) Cool Whip, thawed
  • ¾ cup shredded sweetened coconut



  1. Bake cake according to package directions and cool completely.
  2. Pierce cooled cake all over with a fork. In a small bowl, stir gelatin and boiling water until sugar is dissolved.
  3. Stir in cold water. Pour over cake, cover, and refrigerate 2 or more hours (overnight is fine).
  4. Frost with whipped cream and sprinkle coconut over the top.
  5. Keep refrigerated until ready to serve. Serve cold and refrigerate any leftovers.
