Ingredients
Bread
- ¼ cup unsalted butter, softened
- ¾ cup white sugar
- 1 egg
- ½ cup sour cream
- Zest from 1 lemon
- 1 tablespoon lemon juice
- 2 cups flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- Pinch salt
- 1 cup frozen blueberries
- ¼ cup milk
Glaze
- ¾ cup powdered sugar
- 1 tablespoon lemon juice
Instructions
Bread
- Preheat over to 350 degrees Fahrenheit. Butter and flour and loaf pan and set aside.
- Cream together butter and sugar until a ball forms. Stir in egg, sour cream, lemon juice and zest.
- In a separate bowl, combine the flour, baking powder and soda, and salt. Whisk to combine.
- Add the flour mixture and blueberries to the butter mixture and stir until just combined and add the milk, stirring to combine. Spread batter into the prepared pan and bake for 30-45 minutes or until a tester inserted in the middle comes out clean. Let cool completely before glazing.
Glaze
- Whisk the powdered sugar with the lemon juice until combined. Drizzle over the cake and enjoy!
