Coconut Oil Rice Krispie Treats
With just a few small tweaks, you can make this classic treat better for you AND more flavorful than the original which you already know and love.
Ingredients
- 1 Tbsp. butter
- 3 Tbps. coconut oil
- 1 bag (10.5 oz.) mini marshmallows
- 5 cups crispy rice cereal
Instructions
To Make On The Stove:
- In a large saucepan, melt the butter and coconut oil together over medium-low heat. Add the marshmallows, and stir until melted. Remove from heat, and stir in the crispy rice cereal until everything is evenly mixed.
- Transfer the mixture to a greased 8×8-inch pan, and press down so that the top is flat. Let sit until it returns to room temperature, about an hour. Then cut and serve. Store in an airtight container for up to 1 week.
To Make In The Microwave:
- In a large microwaveable bowl, heat the butter and coconut oil together until melted Add the marshmallows, and stir to combine. Heat for an additional minute or so until the marshmallows are melted. Remove from the microwave, and stir in the crispy rice cereal until everything is evenly mixed.
- Transfer the mixture to a greased 8×8-inch pan, and press down so that the top is flat. Let sit until it returns to room temperature, about an hour. Then cut and serve. Store in an airtight container for up to 1 week.
