I REALLY wanted some enchiladas last week. This Cheesey Chicken Enchiladas recipe was so easy, I may just not go out for Tex-Mex ever again!


  • 1 lb chicken breast – 1 inch cubes
  • 2 cans enchilada sauce
  • 1 envelope taco seasoning
  • 8 8 inch tortillas
  • Favorite kind of taco cheese
  • Salsa/diced tomatoes (optional)



  1. Pre heat oven to 325°
  2. Bring large pot of water to boil and add chicken.
  3. While chicken boils until cooked through (7-10 mins) pour 2/3 can of enchilada sauce into 9×12 glass baking dish
  4. Heat a skillet
  5. Remove chicken and shred (with forks or food processor)
  6. Add shredded chicken to skillet with remaining 1/3 + other can enchilada sauce and half packet of taco sauce (as much as you want really) here is where you can also add salsa or diced tomatoes ( 1/2 -1 cup)
  7. Simmer covered about 10 minutes
  8. Put cheese on tortillas, top with chicken mixture, roll and place in baking dish seam down
  9. Pour remaining chicken mixture over rolled tortillas in dish and sprinkle with cheese
  10. Bake @325 for about 25 minutes
