Cheesey Chicken Enchiladas
I REALLY wanted some enchiladas last week. This Cheesey Chicken Enchiladas recipe was so easy, I may just not go out for Tex-Mex ever again!
Ingredients
- 1 lb chicken breast – 1 inch cubes
- 2 cans enchilada sauce
- 1 envelope taco seasoning
- 8 8 inch tortillas
- Favorite kind of taco cheese
- Salsa/diced tomatoes (optional)
Instructions
- Pre heat oven to 325°
- Bring large pot of water to boil and add chicken.
- While chicken boils until cooked through (7-10 mins) pour 2/3 can of enchilada sauce into 9×12 glass baking dish
- Heat a skillet
- Remove chicken and shred (with forks or food processor)
- Add shredded chicken to skillet with remaining 1/3 + other can enchilada sauce and half packet of taco sauce (as much as you want really) here is where you can also add salsa or diced tomatoes ( 1/2 -1 cup)
- Simmer covered about 10 minutes
- Put cheese on tortillas, top with chicken mixture, roll and place in baking dish seam down
- Pour remaining chicken mixture over rolled tortillas in dish and sprinkle with cheese
- Bake @325 for about 25 minutes
