A luscious cheesecake bursting with the bright flavor of sunshine! Fresh lemon zest and juice permeate every corner of this sweet and tart cake.


  • 7/8 cup butter (room temperature)
  • 8 oz cream cheese
  • 5/8 cup caster sugar
  • 5 eggs
  • 1 tsp. grated lemon zest
  • 2 cups plain flour, sifted
  • 1 ½ tsp. baking powder
    Lemon Icing (Just combine the following)
  • 1 tsp. lemon juice
  • 3 tbsp. icing sugar



  1. Use a K-beater to beat butter, cream cheese and caster sugar at high speed until smooth.
  2. Add eggs one at a time and mix well. Add grated lemon zest and stir well.
  3. Slowly mix in plain flour and pour the batter into 10″ chiffon cake tin.
  4. Bake in a preheated oven at 355°F for 40 minutes or until cooked. Leave to cool and remove from tin.
  5. Pipe lemon icing on the cake before serving.
