Butter Cheesecake with Lemon Icing
A luscious cheesecake bursting with the bright flavor of sunshine! Fresh lemon zest and juice permeate every corner of this sweet and tart Butter Cheesecake with Lemon Icing.
Ingredients
- 7/8 cup butter (room temperature)
- 8 oz cream cheese
- 5/8 cup caster sugar
- 5 eggs
- 1 tsp. grated lemon zest
- 2 cups plain flour, sifted
- 1 ½ tsp. baking powder
Lemon Icing (Just combine the following)
- 1 tsp. lemon juice
- 3 tbsp. icing sugar
Instructions
- Use a K-beater to beat butter, cream cheese and caster sugar at high speed until smooth.
- Add eggs one at a time and mix well. Add grated lemon zest and stir well.
- Slowly mix in plain flour and pour the batter into 10″ chiffon cake tin.
- Bake in a preheated oven at 355°F for 40 minutes or until cooked. Leave to cool and remove from tin.
- Pipe lemon icing on the cake before serving.
