Strawberry Cheesecake
A light and fluffy no bake Strawberry Cheesecake recipe, complete with a fancy chocolate garnish.
Ingredients
Crust
- 1 1/2 cups graham cracker crumbs
- 6 Tablespoons butter, melted
- 2 teaspoons granulated sugar
Filling
- 1 box - (3 oz) strawberry flavor gelatin
- 2/3 cup boiling water
- 2 cups cottage cheese
- 2 cups cream cheese, at room temperature
- 2 Tablespoons granulated sugar
- 1 teaspoons vanilla extract
Topping
- 1 cup heavy cream, whipped
- 1/4 cup chocolate, melted
- 1 jar marschino cherries
Instructions
Crust
- Grease an 8 inch spring form pan.
- Mix crumbs and sugar with melted butter until evenly moistened.
- Press firmly over bottom of prepared pan. Place in freezer.
Filling
- Dissolve gelatin in boiling water in measure cup.
- Puree cottage cheese in food processor until creamy. Add gelatin, cream cheese, sugar and extract; process until smooth.
- Pour into prepared crust; smooth top. Cover and refrigerate 4 hours, or until set.
- Melt chocolate and drizzle onto wax paper in desired design, refrigerate until ready to serve.
Topping
- When ready to serve, whip heavy cream to stiff peaks. Garnish each serving with a chocolate design and a cherry.
