Thyme Chicken with Garlic and Asparagus
Everyone needs a faultless recipe for roast chicken — here’s yours, Thyme Chicken with Garlic and Asparagus. Savor this herb chicken recipe with an exotic flavor which is beyond words.
Ingredients
- 3 to 4 large chicken breasts
- 1-2 tbsp dried thyme
- small bunch of fresh thyme leaves
- 1/2 tsp turmeric powder
- 8 to 10 garlic cloves (mashed)
- 1/4 tsp dried herbs
- 1/4 tsp black pepper (coarsely ground)
- 2 tsp coriander seeds powder
- 1 green chili paste
- 1 lime slice (for garnishing)
- 8 oz asparagus
- 5 to 6 tsp olive oil
- salt to taste
Instructions
- Wash chicken breasts with lukewarm water and keep aside.
- Take fresh thyme leaves, garlic cloves and a pinch of salt in a blender.
- Add 2 tbsp water in it and make a smooth paste.
- Take out this paste in a small bowl and add turmeric powder, dried herbs, black pepper, coriander seeds powder, green chili paste and salt in it.
- Whip the paste well with a spoon and keep aside.
- Apply the pungent paste on chicken breast and leave it for at least an 10 minutes.
- Take 2 tsp cooking oil in a shallow pan and add asparagus in it.
- Add pinch of salt and stir fry for 3 more minutes. Keep aside
- Meanwhile, take the dried thyme and slightly rub and crush with hands.
- Take a shallow non-stick pan and heat groundnut oil in it.
- Place marinated chicken breast and saute from all sides on a very low flame for about 8 to 10 minutes.
- Sprinkle dried thyme on top and garnish with lime.
- Take a serving plate and arrange sautéed asparagus at the bottom.
- Place garnished chicken breast on top of it and serve hot.
