2 Easy Ways to Roast a Whole Chicken

It's nice to be able to choose between the oven and the grill when roasting a chicken. Even better is how great it comes out, no matter which way you choose.
- 1 medium sized chicken
- 1 whole lemon
- 1 tbsp of cumin seeds
- 1 tsp of chilli flakes
- 1 tbsp of coriander seeds
- 1 tbsp of olive oil
- Food process together the lemon, cumin ,coriander , chilli flakes and oil to form a marinade.
- Rub the chicken with the marinade, and refrigerate overnight.
- Roast at 350F for 1.5 hours
- Leave to rest for at least 10 minutes
To cook in oven
- Get your grill to med-high heat
- Place chicken over indirect heat, and let cook for 45 minutes to 1 hour, rotating halfway through. Make sure grill cover is on.
- Remove from heat, and leave to rest for at least 10 minutes
To cook on grill
Make sure chicken is cooked through to at least 165F, if it is not, cook a bit longer
