Ingredients
  • Salad mix
  • Cherry tomatoes
  • Ceasar dressing
    Roasted Pork Tenderloin
  • 2 teaspoons dried thyme, or 2 tablespoons freshly chopped thyme
  • 2 teaspoons dried oregano, or 2 tablespoons freshly chopped oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper, freshly ground
  • 2 teaspoons olive oil
  • 2 pound lean pork tenderloin
Instructions
    Roasted Pork Tenderloin
  1. Preheat oven 400 F. Coat a shallow roasting pan with cooking spray.
  2. Combine thyme, oregano, garlic powder, onion powder, salt and pepper in a small bowl; set aside.
  3. Rub or brush oil all over pork. Sprinkle thyme mixture all over pork and transfer to prepared pan.
  4. Roast until an instant-read thermometer inserted in center of pork reads 160 F. about 30-40 minutes.
  5. Let stand 10 minutes before slicing into thin (about 1/2 inch thick) slices.
    Assembly
  1. Use as much salad mix, tomatoes, and dressing as you would like.
  2. Toss together to combine
  3. Add pork tenderloin, and enjoy!
